We have just spent the last few days in Mirissa and have had the most delicious food you could imagine! I am going to cook it for you and George next time we have our little dinner parties!
A lovely lady called Gayani runs this Rotti shop - she was so lovely - we met her husband and daughter and spent a lot of time with them. I fell in love with her chocolate and banana rotti so one day she gave me a lesson on how to make one! To return the favour we arrived the next evening with a bag full of ingredients and taught her how to make banoffie pie! She is now going to add 'banoffie rotti' to her menu.
Here is the recipe:
1kg wheat flour
1 egg
1.5 table spoon salt
1 table spoon sugar
1. Mix all the above ingredience together and then add a little water to bind together.
2. Make into a ball, cover with oil (coconut oil or vegetable oil) then wrap in cling film and leave at room temperature for 1 hour.
3. Split off into small balls (tangerine size), cover in oil and leave at room temperature for 45min.
4. Take one ball, cover your hands in oil and then flatter dough with your hands - spread out so that it is very thin.
5. Place in pan on a low heat
6. Break chunks of chocolate onto rotti.
7. Slice banana and place in middle of rotti.
8. Drizzle honey over rotti.
9. Fold up sides.
10. Serve and drizzle condensed milk over the top.
